Cooking : Beef Stroganoff Fettuccine

Nothing is an easier fix than a one-pot cooking recipe and THIS, I got from from Readers' Digest Healthy One Dish Cooking cook book. XD

But because the recipe required so many ingredients (which makes it authentic and very tweakable if you're experienced in the kitchen), there are things that you can skip....which, ahem, I did. I mean, I've always dealt with easy off-the-counter sauces and who knew what to do with ground paprika, cayenne pepper, ground this, ground that and Good Heavens, what do you DO with light sour cream?!

Suffice to say, I got a little adventurous and WANTED desperately for a one-dish cooking solution. Busy working people can't be beggars, all moms say.


So, what I did was include the list of stranger-to-me list of ingredients into my Keep App and after picking the kids up from school, headed over to the supermarket and just started grabbing and ticking things off the list. Because I was not parked properly (the kids were waiting for me in the car), this was the shortest ever supermarket trip I've ever had! HAHAHAHA!

Anyway, turns out, once you've cooked down the sour cream, it's sorta just...slightly sourish and creamy. Nothing to scream about, after all. See? I learn something new every single day.

But the great thing about this recipe is that once you have everything you need, it's a matter of dumping everything in one by one...and considering the combination of ingredients, it was DELICIOUS and AN ABSOLUTE HIT! It's pasta, you won't find my kids complaining.

Will I make it again? Absolute-fucking-ly.

Give it a shot if you are feeling a little bored with what you're used to cooking or are familiar with the ingredients.

Beef Stroganoff Fettuccine

Recipe adapted from Reader's Digest One-Dish Cooking Cookbook. Changed it a little to suit what we have in the kit...more

  1. Cooked fettuccine
  2. {marinade}
  3. strips Beef
  4. 1 tbsp soy sauce
  5. 2 tsp steak powder (marinade of your choice)
  6. 1 tsp Worcestershire sauce
  7. 1 tbsp dried mixed herbs
  8. 1 tsp salt
  9. 2 tsp course black pepper
  10. 1 pinch nutmeg powder
  11. 1 tsp paprika
  12. 1 pinch cayenne pepper
  13. 1 tsp cooking oil
  14. [To Cook]
  15. cherry tomatoes
  16. 1 bell pepper (any color of your choice)
  17. 1 large onion
  18. 4 cloves garlic (minced)
  19. 1 can button mushrooms
  20. 1 tbsp balsamic vinegar
  21. 1/2 cup stock (beef/vegetable/mushroom)
  22. 1 tbsp chicken powder
  23. 1 tbsp soy sauce
  24. 1/2 beef cube
  25. 2 tsp corn flour
  26. water
  27. 1/2 cup light sour cream

Method

  1. Marinade beef strips for at least 20 minutes. Air-fry beef strips separately. Alternatively, before proceeding to step 2, cook the beef strips in pan until they are slightly brown and remove.
  2. Heat up pan, add a little oil and cook onion and garlic until onion is soft
  3. Add bell pepper, cook for a minute. Add button mushrooms, cook for 2-3 minutes, stirring occasionally
  4. Stir in balsamic vinegar or sherry, water/stock, crushed beef cubes, chicken powder, salt, pepper, light sour cream, soy sauce/oyster sauce (your food, your choice)
  5. Return beef to the mix. Add in cherry tomatoes and cook for 2 minutes. Mix corn flour with water to form slurry and add it to the mixture and stir slowly. Bring to boil.
  6. Serve with cooked fettuccine.

Grilled Salmon With Unagi Sauce

I always disagree with people who say that they are lazy to cook, it's too hard, no time, too difficult, easier to eat out....etc. I can't agree because I have found multiple ways to cook simple, cheap meals without causing too much of a ruckus to my schedule. All it takes is a little bit of planning ahead and research. And a sense of humor when it turns out...to put it nicely...sucks.

Anyway, here's one simple one that ANYONE (kids included) can cook up. Seriously simple and easy.


I love salmon but my kids don't like the smell and texture. But that doesn't mean that I can't go out to the market and spend RM11 on ONE single piece of salmon fish and make MYSELF one, right? Kids can have the overnight pizza. :-)
