Cooking : Healthy Minced BBQ Beef Salad

It's amazing what time we end up eating lunch these days if I don't make it at home, really. By the time the lazyheads get their asses out of bed, into the shower and ready to trudge into the world, the vast universe of restaurants already have closed kitchens.

We end up eating either fast-foods or the expensive options (where the kitchens don't have breaks). So, these days, I end up cooking lunch instead of dinner.

DID YOU KNOW cooking 2 meals a day can wreck havoc in your life?! Yes, it can.

But this is something really simple and delicious that you can literally make in less than 45 minutes especially if you're using ready-minced beef, chicken or pork from the grocery store. All you need to cut are a few basic things like garlic, onion and the salad. And if you toss it into the electronic cooker or, for me, the multi-purpose rice cooker, everything's done in a blink of an eye.

With ketchup, chili sauce and BBQ sauce, you can't really go wrong with this, anyway. Besides, have a taste test before tossing everything together ALWAYS. Don't say the measurements are wrong because...chances are, they could be. LOL

Anyhoo, here it is. Give it a shot because even my anti-vegetables teens were like 'OK, this is good salad'. Imagine that? My kids saying salad is good. I win. XD

So, here it is.

Healthy Minced BBQ Beef Salad

Easy dump-everything-into-the-pan recipe, mixed together with freshly cut lettuce and tomatoes and you're ready to go. It's a fantastic way to get your kids to eat fresh vegetables, even my anti-vegetable teenagers said it was great! If you want, add some hard boiled eggs. You can eat it with toast bread, pitas or rice, the world is your oyster...speaking of which....yum...lol

Ingredients

3 servings
  1. [Main Ingredients]
  2. 410 g minced beef
  3. 1 large onion
  4. 4 cloves garlic, minced
  5. [Sauces]
  6. 2 tbsp soy sauce
  7. 1.5 tbsp oyster sauce
  8. 1.5 tbsp BBQ sauce
  9. 2 tbsp chili sauce
  10. 1 tbsp tomato sauce
  11. [Seasoning]
  12. 1.5 tbsp steak seasoning
  13. 1 tsp black pepper
  14. 1 tsp ginger powder (optional)
  15. 1 tsp onion powder (optional)
  16. 1 tsp paprika (optional)
  17. 1.5 tsp salt
  18. 1.5 tbsp honey
  19. 1.5 . cup stock/water
  20. [Salad]
  21. fresh lettuce and tomatoes, cut any way you like

Method

45 minutes
  1. Heat oil in pan, saute garlic until fragrant, approximately 1 minute
  2. Mix all ingredients except stock into a mixing bowl
  3. Add beef into pan and cook until beef if half-cooked, add mixed sauce into the pan, approximately 5 minutes
  4. Add broth/water and onion into mixture, cook for another about 2 minutes or so (until onion is kind of soft but not mushy)
  5. Toss into salad of lettuce and tomatoes (or any other vegetables of your choice) and mix (picture was taken before mixing because it doesn't look as nice after mixing - but DELICIOUS!)
